Mug cakes look easy until the bottom comes out raw. This is a tight reference: the conversions you need, the right ratios, and the five things that usually go wrong.
1. Spoon conversions (memorize this)
Microwave baking lives or dies by ratios, and every ratio reduces to teaspoons.
- 1 tbsp = 3 tsp
- 2 tbsp = 6 tsp
- ½ tbsp = 1½ tsp
- ¼ tbsp = ¾ tsp
For the recipe below in teaspoons:
- 4 tbsp cake mix = 12 tsp
- 3 tbsp water = 9 tsp
- 1 tbsp oil = 3 tsp
2. The recipe
This is the baseline ratio. Works with most boxed cake mixes — strawberry, vanilla, chocolate, funfetti.
- 4 tbsp cake mix (any flavor)
- 3 tbsp water (or milk for richer texture)
- 1 tbsp neutral oil
Stir until completely smooth — no dry pockets at the bottom of the mug. Microwave 60 seconds, then check. Add 10-second increments until the center is just set.
3. Why the bottom comes out raw
If you cut into it and the top looks done but the bottom is still wet, gummy, or batter-like, it's almost always one of these five:
Not cooked long enough
Microwaves vary wildly. A 700-watt microwave needs noticeably more time than a 1100-watt one. Don't go off a fixed time — go off whether the center is set. Add 10 to 15 second increments.
Too much liquid
Strawberry and other fruit-based mixes hold more moisture. If you keep getting wet bottoms, dial it back:
- 4 tbsp cake mix
- 2½ tbsp milk or water
- 1 tbsp oil
Wrong mug shape
A deep, narrow mug traps the bottom under a layer of cooked top. A wider, shallower mug cooks evenly because the microwave can reach the bottom. Pick width over depth.
Batter not fully mixed
Dry mix settling at the bottom creates a gummy layer that looks raw. Stir until you can run a spoon through and feel zero dry resistance.
Too much batter for one mug
If you doubled the recipe into a single mug, the center can't cook through before the top dries out. Split into two mugs.
4. Quick fix when it's already raw
If you cut in and the bottom is wet, don't throw it out:
- Stir the raw part into the cooked part with a spoon.
- Microwave another 15 to 20 seconds.
- Let it sit for 1 minute — carryover heat finishes the cook.
5. Diagnostic checklist
When you're trying to dial in a new mix or new microwave, write down:
- Mix brand + flavor
- Exact measurements
- Microwave wattage (check the door label)
- Mug shape (narrow / wide)
- Liquid used (water vs. milk)
- Total cook time + whether you stopped to stir mid-way
Two batches with notes is enough to find your sweet spot.
