The crust
2 cups flour, 1 tsp salt, 1 cup butter (cold), 1/4 cup ice water. Mix flour and salt; cut in butter until pea-sized; add water; chill 1 hour. Roll out, place in 9" pie pan.
The filling
3 cups boiled sweet potatoes (cooled and mashed). 3/4 cup brown sugar, 1/2 cup melted butter, 3 eggs, 1 cup whole milk, 1 tablespoon vanilla, 2 teaspoons cinnamon, 1/2 teaspoon nutmeg, 1/4 teaspoon salt.
Mix and bake
Beat eggs first. Mix in melted butter, milk, vanilla. Stir in sweet potato. Add sugar and spices last. Pour into crust. Bake 350°F for 55–65 minutes. Cool 2 hours.
Don't compare to pumpkin pie
It's a different dessert. Treat it like the queen of Southern pies.
